The Seleccion Especial Cava is a 40/30/30 mix of macabeo, xarel-lo, and parellada grown at San Sadurni d’Anoia that rings all the Cava bells. The nose is fragrant, with leesy almond and peach. The mousse is tight and persistent, with red apple and almond paste mixed with fennel and cherries. So fresh and lively, this is the ultimate seafood tapas bubble.
