SpainLuis Pérez is a professor of enology at the University of Cádiz, and former winemaker at Domecq. Together with his son Willy they clearly tell the story and diversity of four pagos: Corchuelo, Carrascal, Balbaína, and Macharnudo. This rosato is from 25 year old organic tintilla rooted in the albariza soils of Calderín del Obispo vineyard. The grapes had a 4 hour maceration and native fermentation in stainless, before resting there 6 months on fine lees. Pouring a moderate blush / pink hue, this dry, full bodied (14%) rosé packs wild strawberry, raspberry, cherry into a streamlined palate, with hints of candied watermelon, a texturing stony spice, and shining bright limestone acidity. Quite interesting, the contrast between the slicked lining and the savoury overlay, streaking with buzzy limestone and plumped with the Southern Spain sun, this has the guts to partner with equally gutsy tapas and pintxos.Tasted: 23 December 2022Tasted by: Treve RingPrices:BC | $29.95 | 750ml | select private retailers |
