SpainLuis Pérez is a professor of enology at the University of Cádiz, and former winemaker at Domecq. Together with his son Willy they clearly tell the story and diversity of four pagos: Corchuelo, Carrascal, Balbaína, and Macharnudo. This rosato is from 25 year old organic tintilla rooted in the albariza soils of Calderín del Obispo vineyard. The grapes had a 4 hour maceration and native fermentation in stainless, before resting there 6 months on fine lees. Pouring a moderate blush / pink hue, this dry, full bodied (14%) rosé packs wild strawberry, raspberry, cherry into a streamlined palate, with hints of candied watermelon, a texturing stony spice, and shining bright limestone acidity.
