Champagne Henriot Millésime 2012
Champagne, FranceHenriot's vineyards have been around since the 1700s, but they didn't begin producing sparkling wine until 1808, when Apolline Henriot began to make wine from her family's lands. Vintage 2012 blends 54% chardonnay with 46% pinot noir, from 6 1er and GC: Trépail, Mailly-Champagne, Verzenay, Avenay in Montagne de Reims; and Avize, Chouilly in Côtes des Blancs. This spent a minimum of 8 years sur lattes, and was dosed with 6 g/L. Deep apple and toasted brioche fill the base of this generous wine, filled out with lemon, anise, brown butter along an expansive finish.
