Champagne, FranceHenriot's vineyards have been around since the 1700s, but they didn't begin producing sparkling wine until 1808, when Apolline Henriot began to make wine from her family's lands. Today Henriot is part of Champagne’s largest co.op, Terroirs et Vignerons de Champagne (TEVC). This BdB comes from 12 crus, and employs 30-50% reserve wines (including their perpetual reserve). After a minimum of 3 years, this is disgorged with under 5 g/L. Buttery brioche, green apple, and oyster shell is lit with lemon pith and peel, and threaded with an alluring flinty reduction.
