It unfurls its layers on the palate, revealing dark cherries and roasted red beets with savoury spices that are framed by a nice backbone of tight acidity and firm tannins. The subtle, salted dark chocolate on the finish adds complexity. Beamsville Bench, Niagara Peninsula, Ontario, CanadaFrom Saunders Vineyard, a certified organic vineyard on the Beamsville Bench along King St., this comes from a single block at the 'bas' of the vineyard. There's an exuberance to the fruit of these young vines, with a combination of black raspberry and chocolate-coated cherry that's rounded by aging 20 months in third-fill and neutral Burgundy barriques. The fruit is layered with sappy herbal notes, graphite, and violets, showing real depth and complexity even at this early stage. It's a complete, finely structured pinot that's just beginning to open up, though certainly will be even better 3-5 years from now.
