Champagne, FranceThis BdN comes from sustainable / organic conversion pinot noir vineyards in the Côte des Bar, as the name reflects. This was fermented in stainless, with full MLF, and includes approximately 1/4 reserve wines (partially saved in oak). This spent 3 years on lees, and was disgorged with 8 g/L. There's a wave of oxidation opening this red fruited fizz, with cherry brioche, rhubarb, and tart red currant acidity along a lightly buzzy palate.
