Okanagan Valley, British Columbia, CanadaThis wine is all about texture, something winemaker Taylor Whelan attribute to a new regime working with Simes Vineyard Pinot Noir. "The combination of the more classic cherry and raspberry flavour profile from clone 667 and those soft, velvety tannins from clone 943 just work together so well." It opens slightly reductive with earthy mushroom mixing with dark cherry. The wine cleans up with time in the glass, so consider splash decanting it before serving. The fruit is farmed organically and fermented wild in 75/25 concrete and stainless steel.
