Sicily, ItalyA rare and coveted dessert wine, Passito di Pantelleria is made from sundried zibbibo grapes (akin to muscat of Alessandria) rooted in sandy soils on the tiny volcanic island of Pantelleria, southwest of Sicily. Twelve different sites, soils, and altitudes made up this complexed blend of bush vines, some up to 100 years in age. This is fermented in stainless steel with the dried grapes added to the fresh must in several batches, releasing their concentrated layers of sweetness to the fermenting juice. This aged in stainless for at least 7 months, plus 1 year in bottle prior to release. With 190 g/L RS, it will easily last decades in your cellar. Pouring a burnished golden chestnut hue, this elixir lures with warm butterscotch, buckwheat honey, caramelized orange, dried apricot, and golden raisins along an expansive, lengthy palate, studded with flake salts and lifted with bergamot oil through the smouldering savoury finish. There's a beautiful inherent acidity to cut through the potent sweetness on the palate.
