Priorato, Catalunya (Catalonia Cataluña), SpainAntoni Sànchez-Ortiz says, “With active viticulture dating to the 12th Century, Priorat is as Old World as it gets." 2017 was one of the earliest harvests in history, where temperatures were extremely high in June and July, causing an early ripening stage with a drop in yield, but it is still a blockbuster introductory wine for Priorat. Its ever-changing blend of syrah and garnatxa brings floral notes, while carinyena and merlot add complexity and earthiness to the wine. The palate is a mix of earthy, slate, mineral notes with sweet and sour black cherry and licorice over a savoury chocolate underbelly. The winemaking begins with a five-day cold soak in stainless steel tanks. The berries undergo carbonic maceration for twenty days to extract maximum flavour and gentle tannin extraction.
