Sonoma Coast, Sonoma County, California, United StatesCrossbarn is made with hand picked fruit from select vineyards across the Sonoma Coast appellation. Sonoma Coast is the perfect home for Paul Hobbs because it provides the intensity he likes, but remains relatively fresh and cool in the glass. Look for slate notes with honey and spice in the background, while on the palate, it is all about pears and peaches with a mineral underside. Living in a fog-washed world gives the fruit a crunchy and flavourful finish. It is fermented in 92 percent stainless steel, eight percent barrel fermented, and it all goes through malolactic fermentation, with five months on lees, stirred weekly.
