Bella Wines Bubble Dogs 2021

Naramata Bench, Okanagan Valley, British Columbia, CanadaThough known for their exclusive gamay and chardonnay fizz, Jay has been experimenting with small lot productions of other fun grapes and wines. Bubble Dogs is the winery's first ancestrale method pinot noir, from Naramata's Black Pine Vineyards, and made in conjunction with Vancouver's Dachi restaurant. This spent 6-8 hours on skins, and was settled overnight in tank and then racked into neutral barrels for the wild ferment to begin. It went into bottle with 20g/L RS to continue ferment, and remained there 6 months prior to disgorge and a wee tip of sulphur added. Red currant, dark cherry, herbal thorns mingle with lightly smoked stone on the slight 10.7% palate. The bone dry wine is full of juicy pinosity, and I can see it making a smart pairing wine (togarashi tofu yum).
