On Seven The Pursuit Chardonnay 2019
Niagara Peninsula, Ontario, CanadaOn Seven is a relatively new boutique Niagara winery owned by passionate wine aficionados Vittorio & Sula De Stefano. The De Stefanos bought an abandoned 7-acre vineyard (hence the name) in 2009 in Four Mile Creek and, under the guidance of consultant viticulturist and founding winemaker Peter Gamble, prepped the site for three years before replanting organically in 2014. It is primarily Dijon clone 76, planted in 2014, with a small percentage of grapes from their 2015 planting of Dijon clone 95. It was transferred to French oak barrels (25% new) whole-cluster for native fermentation and 20 months of aging. Creamy and ripe, with cream, lemon curd, baked yellow apple, green apple, pear blossoms and toasty spice caressing the full palate, one lined with downy lees.
