Wiston Estate Cuvée 2015
EnglandThe Goring family have farmed the chalky Wiston Estate on the South Downs for 275+ years. This single vineyard wine blends 45% pinot noir, 33% chardonnay, and 22% pinot meunier, each fermented separately in aged barrels, with no MLF, before heading to bottle and a minimum 3 years' rest on lees. This bottle was disgorged April 2021 with 8 g/L. There's a cloud of oxidation hanging over this expansive fizz, with tight and nervy lemon up against baked red apple, ripe pear, buttery toasted brioche.
