Sussex, EnglandPouring a deep salmon hue, this South Downs sparkler is a estate blend of 81% Pinot Noir, 13% Chardonnay, and 6% Pinot Meunier, with barrel-aged red wine added for the hue. It was fermented in stainless before heading to bottle for 24 months, dosaged at 5.3 g/L Round and doughy cherry, raspberry fill a generous palate, with tight and lively can / rhubarb tinged acidity to stream along the palate. The finish lingers with a gentle chalky shimmer.
