Champagne, FranceDe Saint Gall is the flagship label of of major co-op Union Champagne, the wealthiest co-op in the world, and a massive force of 1860 members, founded in 1966. This boutique wine comes from 1er cru villages Versus, Bergères les Versus, Avize, Clamant, Oger, Mesnil-sur-Oger, Villers Marmery in the Côtes de Blancs. This chardy had 36 months on lees, and was dosed with 8g/L dosage from a solera that goes back 40 years. Lemon blossom, pear skin, green apple is bedded by a deep chalk base, and centered around a round apple core. The finish trails off into chalk dust.
