Champagne Ayala La Perle 2012
Champagne, FranceLa Perle is Ayala's prestige cuvée, made only in the best years, and composed of Grand Crus Chouilly, Cramant, Le Mesnil-sur-Oger, and Verzy (Côte de Blancs and Montagne de Reims). The 2012 is 80% chardonnay, 20% pinot noir, rested 8 years on lees under cork closure (agrafé) and was disgorged in July 2020 with 6 g/L. Deep biscuit and dough leads the nose and continues on the palate, joined by red and green apple, subtle Rainier cherry, lemon pith / peel, all etched with chalk.
