McLaren Vale, South Australia, AustraliaUncut is the first-ever Gemtree wine, and today it reflects the vineyards and winery work over the last 22 years. It is made from biodynamically grown vines spanning 20-60 years, fermented naturally in 5-8 tonne open fermenters before ageing in French oak puncheons, 500L, and 225L barrels for 12 months (20% new). The wine is aged on its lees with minimal racking, thus essentially Uncut. As a result, the fruit is exceptionally pure, mixing blueberries and red berries perfectly spiced and oaked. McLaren Vale, South Australia, AustraliaThis Shiraz was the first they made off their organic / biodynamically farmed estate in McLaren Vale. From vines 20-60 years, this was native fermented before aging in French puncheons and barriques for one year (20% new), with minimal racking. This juicy, full-bodied red is packed with spiced raspberry, kirsch, mint, and shellack, on a smoothed palate, with bright acidity and ample spiced tannins sueded into the dense, salted black licorice ruling the palate.
