Time Brut 2018

Oliver, Okanagan Valley, British Columbia, CanadaA blend of north and south Okanagan, with chardonnay from Phantom Creek in Oliver, and pinot noir from Kuipers in Kelowna. This was fermented in a combination of neutral barriques and stainless steel before secondary fermentation in the charmat method. It shows bright lemon and red apple skin, with lees adding complexity to the nose and a creaminess to the palate. Textured and refined, it's nicely balanced with the fruit ripeness to carry the brut nature style (1 g/L). It's crisp but not austere, with a lovely soft mousse, which will lend itself both as an aperitif or paired with lighter shellfish dishes like scallop crudo.Tasted: 19 December 2021Tasted by: Prices:
