This was fermented in a combination of neutral barriques and stainless steel before secondary fermentation in the charmat method. It shows bright lemon and red apple skin, with lees adding complexity to the nose and a creaminess to the palate. Textured and refined, it's nicely balanced with the fruit ripeness to carry the brut nature style (1 g/L).
