Sant Sadurní d'Anoia, Penedès, Catalunya (Catalonia Cataluña), SpainThe third generation, Ton Mata, manages this family estate and the 65ha in the calcareous terroir of the Bitlles Valley in Penedès' Sant Sadurni d’Anoia. In 2019, Recaredo and eight more family wineries cut ties with the Cava DO to form their own EU-recognized body that is tied to sustainable farming, and place: Corpinnat. This blend of Xarel-lo, Macabeu, Parellada, Monastrell comes from select organic / biodynamic estate vineyards. After a native ferment, primarily in stainless, this spent 2 years on lees, under cork, before being disgorged with 0 dosage. The nimble tightness of green apple, pear skin, marcona almonds, broken stones is offset by a toasty doughy oxidative note, courtesy of the time on lees, under cork.
