Malivoire Farmstead Gamay 2019
Niagara Peninsula, Ontario, CanadaMalivoire is one of Canada's top gamay specialists, with numerous expressions and releases each vintage. This cuvée blends fruit from Niagara-on-the-Lake and Twenty Mile Bench. The co-fermented fruit was primarily destemmed, with 20% whole clusters. It was fermented in stainless, before 1/3 was sent to neutral oak to rest 7 months, leaving the remainder behind in stainless. Sour cherry, wet wood, wild herbs, sarsaparilla fill a juicy, mouth-filling palate, framed with fine grained tannins, and finishing with a rush of rhubarb acidity and baking spices.
