Chablis, Burgundy, FranceThe Vrignaud family, settled in the village of Fontenay-près-Chablis, have been growing vines for 5 generations. Guillaume Vrignaud started to bottle his first wines in 1999, and became certified organic in 2009. They have 28 hectares today. This comes from 40 year old vines in the 1er Cru Mont de Milieu, situated south of the Right Bank's acclaimed Grand Cru Chablis. Historically, this hill used to have a boundary running through its middle, separating the county of Champagne and the duchy of Burgundy. This wine was native fermented in stainless, where it remained on lees for one year, sans bâtonnage. Salty, salty, salty, this streamlined chablis streaks across the palate, with green apple, lemon, subtle lemon blossoms, and broken stones atop a bed of lees, and finishing with a lingering saline wash.
