A new label of 65/35/10 chardonnay, pinot noir, and pinot blanc spends 42 months on lees after a traditional fermentation. The nose is well tuned and tightened to reveal citrus, green apple, with toasted notes and a rich lees character throughout. The palate is equally taut, begging more time in bottle or a creamy cheese to balance its bright, youthful acidity. It is one to age but doesn't be afraid to enjoy along its journey. Unlike that simpler fizz however, this serious traditional method sparkler spent 42 months on lees prior to disgorgement. This is tight and sharp with green apple, lemon pith and peel, light toast, and subtle white flowers on a humming frame, finishing with a twist of lemon and brace of stones.
