François et Julien Pinon Silex Noir Vouvray 2019
Vouvray, Touraine, Loire, FranceFrançois, a former child psychologist, took over the Vallée de Cousse, Vouvray estate from his father in 1987, and is now joined by his son, Julien. The vineyards are dedicated to organic viticulture and minimal intervention vinification. From estate vines averaging 40 years, on flint, clay, tuffeau, and limestone soils. The cuvée is named for their 2 parcels of rare black flint soils going into this wine. This was native fermented in old wooden vats over 2-3 months, leaving some RS naturally upon completion. The wine is then aged on its lees for 4-5 months in a variety of older barrels and foudres. This youthful wine is subtle up front before shrining in the glass with honeysuckle, fragrant pear, subtle quince along a seamless, palate, lit from beneath with a buzzy shimmer of stony minerality, and gently expansive on the palate thanks to the well-placed honeyed RS in this demi-sec.
