YK3 Sake Junmai Ginjo NV
British Columbia, CanadaYK3 is a Richmond-based sake company, so named because the Toji (brewmaster) and two founders all share these two initials. The rice is high quality Calrose, imported from Sacremeto, California, where most of the North American sake rices are sourced from. Junmai is very pure, with only rice, water, yeast, and koji added. Junmai Ginjo indicates that at least 40 percent of the rice grain has been polished away. Very creamy, with a pillowy silken vanilla sweetness that slides along the dry palate, joined by perfumed melon and subtle gooseberry.
