Pouilly-Fume, Upper Loire, Loire, FranceThis sustainably farmed, low-intervention sauvignon comes from a 4.5 hectare monopole rooted in kimmeridgian marl, rarely seen in Pouilly-Fumé, and at 200m altitude. It was native fermented in stainless, where it remained on lees, and bottled when the lunar cycle was favourable. Earthy and savoury, this is scented with wild orange, broken stones, anise, green hedge, tarragon, with a lees-decked palate finishing with bitter lemon pith.
