The Hermit Ram Zealandia Pinot Noir 2019

Canterbury, South Island, New ZealandTheo Coles makes small lots off tiny naturally farmed vineyards throughout the Canterbury region of New Zealand. The wines are made with the minimal amount of additions and deletions. This comes off several parcels of organically grown fruit around North Canterbury, from a mix of basalt, clay, limestone, and gravels. After destemming and a native ferment, this macerated on skins for six weeks with only 1 punchdown. It was aged in Tinajas, bottled unfined and unfiltered, with minimal sulphur. Tight and lifted, this slender red is washed with a balsamic rinse to reveal scrubby plum, crunchy wild blueberries, cherries, and wildflowers. Though quite structural, tannins are a slight suggestion, while acidity is pointed to the sky.
