Oliver, Okanagan Valley, British Columbia, CanadaGamay has become a specialty at Haywire, where it is handled with the utmost care and attention, allowing it to be a true, cool climate British Columbia wine. It is a mix of Oliver and West Kelowna fruit that is processed in a very elementary manner. First, the grapes are destemmed and placed into concrete and open top stainless tanks for fermentation. There are twice daily punchdowns while it spends four weeks on skins. Post ferment, it is basket pressed and transferred by a gravity induced run into concrete tanks for ten months of ageing on its lees before being bottled unfiltered. The style is cool and fresh with silky textures and spicy plum, raspberry, and earth. A modern version of Beaujolais with a bright future.
