But Jay and Wendy decided to hold a lot back for release in 2023, with 40ish months on lees. I snuck a peak at 31 months on lees, disgorged June 2022 for the International Cool Climate Wine Symposium. This terroir-focused traditional method fizz is gamay from organic, volcanic soiled Beaumont Vineyard in Westbank. Pouring an orange / peach hue, this is tight and nervy with pink grapefruit, red currant, wild strawberry, tangerine, on a dry, raspy, saline-kissed palate. Pouring a peach hue, this salty wine streams wild raspberry, wild strawberry along a streamline palate, buzzing with energy and finishing with a red currant kick on the bone dry, white pepper finish.
