Adamo Blanc de Blancs 2017

Niagara Peninsula, Ontario, CanadaFrom their Kirby Vineyard's sand and loam, this traditional method chardonnay underwent ferment and aging for 8 months in oak before transferring to bottle for secondary ferment. It was disgorged with 2 g/L RS. Toasty, with sharp lemon, pith, green apple on a creamy base, this is a tart, high acid fizz, finishing with a chalky grip.
