Yarra Yering Dry Red Wine No. 1 2015
Yarra Valley, Victoria, AustraliaFrom Gruyere's grey silty loams, in central Yarra Valley, this cool climate cabernet (tipped with 2.5% Viognier, 2% Mataro, .5% Marsanne) was planted in 1969. This was basket pressed, fermented whole berry (1/3 stalks) in tiny stainless half ton fermenters, with 15 months aging in French barriques (40% new). Herbal wild black cherry, wild blackberry runs the lengthy, graceful palate, with bright, natural acidity reflective of the cooler climate. Tannins are fine and stencil this through the lingering, saline finish. Reserved, this wine makes you come to it (and you will!). Stunner example of Yarra's cool climate cabernet.
