Cowichan Valley, Vancouver Island, British Columbia, CanadaFrom Cowichan Valley’s dry-farmed Saison vineyard, and clones 115, 667, 777, and 828, this was destemmed and cold soaked for 48 hours before native fermentation in neutral French open-top puncheons, and 23 months’ rest in neutral French barrels. Wild cherry, dark raspberry, flood a softer palate, layered with fine spicing, and finishing with a saline streak.
