Early picked for its freshness, it is native fermented in concrete eggs for texture which it has in spades. From strawberries to cherries, it is refreshingly dry and focused from the front end to the rear, sporting orange and spice highlights. Impressive and well worth trying, even at $40. The 9 hectare organic estate was started in 1992 by well-known Italian wine consultant Roberto Cipresso. It is now owned by American Natalie Oliveros, who came on board in 2011. After an early pick, this was native fermented in concrete eggs, resting for 7 months before release. Silken and elegant, with wild summer strawberries, Rainier cherries gliding along a very saline, slender palate, finishing with an alluring mandarin twist and a dusting of spice.
