Cathedral Cellar Cabernet Sauvignon 2018

Western Cape, South AfricaThis wine takes us on a tour of the Western Cape, with fruit sourced from Stellenbosch, Swartland, Darling, Voor-Paardeberg, Botrivier, Wellington, and Paarl. It's oak-forward, with vanillin, coffee, and toast, after aging in a 95/5 combination of French and American oak (35% new). The rich, dark fruit is slightly overshadowed, but comes through on the sweet attack and medium-full bodied frame. This will benefit from a few years in the cellar to soften the firm, grainy tannins and absorb some of the wood.Tasted: 13 April 2021Tasted by: Prices:
