Bairrada, Northern Portugal, PortugalThis traditional method fizz blends Maria Gomes, Bical, Cercial from 30 to 60 year old vines, rooted in Bairrada's calcareous clay soils. After a native ferment in stainless followed by time in barrels and foudres, this moved to bottle for second ferment and 36 months on lees. This was disgorged in June 2020, with zero dosage. Toasted nuts, broken stone base this wine, now showing its bottle age and the extended time on lees with some oxidative notes throughout. Acidity is brisk, carrying sheared lemon, green apple, herbal lees to a limestone buzzy finish.
