Philippe Chavy Bourgogne Chardonnay 2018
Burgundy, FrancePhilippe Chavy is a third-generation winegrower in Bourgogne. The majority of his Puligny vineyards were planted by his father in the 1950s, while his Meursault vineyards came to him from his mother’s line. Altogether, he now farms fewer than 2 ha across thirty plots and fourteen lieu dit, all with biodynamic practices. The fruit for this Bourgogne comes 90% from Puligny, with the rest from Montrachet. After a stainless ferment, this moves to older wood of various sizes for 11 months' rest on lees, with bâtonnage. This opens with a stream of oxidation (premox?) cutting sharply through lemon, crunchy yellow apple, white florals, leaving a wake of salted nuts and sharp lemon. Quite Jura-esque, and somewhat like chardonnay met Sherry, and got into a scrap. Certainly edgy.Tasted: 20 February 2021Tasted by: Treve RingPrices:Grape: Chardonnay
