A gentle pressing and cool ferment and a short 3-month stint in stainless are aimed at preserving freshness. It's bright and fresh, thanks to early picking during the first two weeks of February. A cool fermentation in stainless steel makes this quite fruit-driven in style, with cherry and strawberry complemented by subtle spice.
