Robert Mondavi Cabernet Sauvignon The Reserve To-Kalon Vineyard 2016
Napa Valley, California, United StatesThe blend is a 92/6/2/ mix of cabernet sauvignon, cabernet franc, and petit verdot harvested from the finest blocks within To Kalon. The grapes are hand harvested with three stages of strict sorting: first, on the vine; then by individual clusters; and then again by single berry following destemming. The selected grapes go directly to traditional French oak vats for a cold soak, fermentation, and extended 35 days of skin contact. The new wine is pressed into new French oak barrels before malolactic fermentation. The final blend was assembled through repeated tasting trials over eighteen months of barrel ageing. Look for flavours of rich blackberries, black plums, and dried herbs. There is more precision here, with elegant floral notes and stylish, savoury, umami, and wild dried herbs running through the finish. It is also more aromatic than Mt Veeder. Super quality and length with balance for the ages.
