Canterbury, South Island, New ZealandTheo Coles makes small lots off tiny naturally farmed vineyards throughout the Canterbury region of New Zealand. The wines are made with the minimal amount of additions and deletions. This natural pét-nat is from 35+ year old Muller Thurgau vines, a variety that was once planted solely for blending off into bulk wines. This comes from one of the oldest vineyards in Canterbury, was fermented whole cluster, and pressed after 2 weeks of carbonic maceration. The second ferment was kicked off in the bottle via some must that was frozen, and then tipped in. Intense on the cloudy yellow palate, yet delicate, with elderflower, orange blossom, Asian pear crunchiness on a subtly frizzante palate, with a riff of texture. Bitter orange rinses the finish.
