Mas Codina Cava Brut Nature Reserva NV
SpainMas Codina is a 40-hectare estate in the Alt Penedès, dating back to 1681, and traditionally planted to polyculture. Over time the family has transitioned the organically farmed estate to vineyards (and the 100+-year-old olive trees). This Cava blends macabeo, xarel-lo, chardonnay, and pinot noir from 20 to 30-year-old vines harvested a single vintage. This spent a minimum of two years on lees before release, with no dosage. Tight and nervy with apple (fresh and dried), almonds, broken stone, ginger, and orchard blossoms on a fine, lees-lined palate. This finishes with vanilla biscuits and a hum of acidity.
