Champagne, FranceIt is always a privilege to taste this historical champagne that is often underrated by those quick to dismiss larger producers in favour of the artisan. Let’s be clear; not all large producers are committed to the highest quality in the same manner, and not all artisan producers can make outstanding wine. The 2010 Dom is a 54/46 chardonnay/pinot noir mix that is humming along just fine in 2022, essentially mid-life for this champagne. Tasted several times now since its release, I am always amazed at its ability to project power and intensity while tasting as elegant as a Blanc de Blancs most years. A subtle palate of cherries, lemon, chalk, and salt weave in and out of every sip, leaving you wanting more. Freshness with complexity is a powerful pairing and one this label accomplishes easily. Champagne, FranceIn 2010 the Dom cuvée was 54/46 chardonnay/pinot noir, and my bottle was disgorged in February 2019 with a dosage of 5g/L. Powerful and complete, with cherry essence scenting a deep base of chalk, lemon, green apple, and salinity. There is a fine toasty framework around the sides, hugging the expansive palate through the end. For all its Dom power, there is an effortless freshness and lifted acidity that flows this through the lingering finish. The essence of Dom Pérignon, its subtlety and complexity, via citrus, bread crumbs, white pepper, and red plums all come together to be something much more than the parts. The bubbles are tiny, the texture creamy, and filled with persistent lemon curd and lees that lingers forever in a salty seawater finish. Elegance with power and persistence puts it into a league of its own most years, with only a handful of challengers.
