Beamsville Bench, Niagara Peninsula, Ontario, CanadaThis traditional method chardonnay comes their Cave Spring Vineyard on Beamsville Bench. It spent 2 years on lees prior to disgorgement. Tight and racy, with lemon, green apple, anise led by ample chalk on the textural, nimble, savoury palate. The limestone soils are in full force here, gripping, livening the slender palate, and drawing it long to a lingering, humming finish.
