Naramata Bench, Okanagan Valley, British Columbia, CanadaFrom their Naramata Bench estate, this was whole cluster pressed, with 14 hours of skin contact before pressing, and then ferment in stainless, stopped when the desired level of sugar was balanced. This walks the tightrope between acidity and sugar, with 4.5 g/L RS and TA 9 g/L, and lime peel cutting a sharp swath across ripe pear and Asian pear, finishing with bright lime sorbet.
