Perlage became one of the first Italian organic sparkling wineries, making high quality Prosecco Valdobbiadene using both tradition and innovation. This glera comes form the calcareous Refrontolo hills, and it was dosed with 8 g/L. The dosage is no match for the racy acidity, leaving a tight palate of pear skin, lemon blossom, elderflower, and green apple, over a zippy broken stone base.
