After a whole cluster press and short time on skins for the deep, cool pink hue, this fermented cool in stainless before racking and resting in stainless for 7 months with weekly bâtonnage. Fresh strawberry, raspberry floods a silken palate, lined with a cool sheet of lees, and seasoned with fine pink pepper dusted tannins.
