Olivier Morin Cuvée Constance 2016
Burgundy, FranceThe Morin family has owned the Chitry domaine since 1650, and it is now in the careful hands of Olivier Morin. Chitry is a neighbour to Chablis, just 12 km away, and in the early part of the 20th century, the wines from Chitry were labelled Chablis Village. It is now an established village within the AOP Bourgogne Framework, with the official appellation Bourgogne Chitry for their wines of chardonnay and pinot noir. Olivier studied oenological studies in Beaune but took a decade-long pause to fulfill a successful career as a DJ before returning to the family property and joining his brother Christian, in 1992. Now, together with his wife Nelly, Olivier tends to their 11 hectares of older vines organically. Half the vines are planted to chardonnay, with the remainder split between pinot noir and aligoté. Being so close to Chablis, the vines share the same Kimmeridgian limestone and clays, which you can feel in the mineral hum in this wine. As with all his wines, this was native fermented in stainless, and aged on its lees before bottling without filtration and low SO2. Wet stone beds and leads this alluring white, graced with subtle wildflowers, herb-scented lees, lemon pith, delicate anise flower, to a lengthy, savoury finish: beauty balance and precision, and another apparent reason to let chardonnay and limestone just be.Tasted: 06 July 2020Tasted by: Treve RingPrices:
