Craven Wines Chardonnay 2019

Stellenbosch, Coastal Region, South AfricaFrom Stelly's Bluegum Grove and its super sandy granitic soils (like a beach), this was native ferment and whole cluster pressed to neutral 500L barrels after 5 hours, and after a five month wild ferment and natural MLF, it was left on the lees for four more months before racking. They only made 1000 bottles in 2019, a tricky, low-yield year for this wine. Lovely tight lemon, white florals, yellow plum and crunchy quince is tightened with crystalline lemon pith, and concentrated by the low yields.
