Abruzzo, ItalyThis organic pecorino comes from the limestone / clay soils of Tollo, in the Chieti province. This was entirely raised in stainless, to preserve the bright fruit and acidity. Quince, white peach, pear, Mediterranean lemon, fresh thyme, fills the compact palate, fresh and humming, to a snappy, wild honey finish.
