Post-ferment, twenty percent remains in stainless steel while the rest is exposed to wood staves during the ageing process. Spier has a brighter attack than its companions in this price range, and you fell it in the soft, plummy, cherry fruit marked with a touch of menthols, earth, and ash in the finish.
