Champagne, FranceLes Parcelles is sourced entirely from the Paillard's home village of Bouzy, and from 22 plots of the family's sustainably-farmed vines, now averaging 25 years. As noted by the XIV on the label, this is based on the 2014 vintage (70%), and is a mix of 70/30 pinot noir / chardonnay (the latter an anomaly in PN-centric Bouzy), disgorged in November 2018 after 4 years on lees, and with less than 2 g/l dosage. Champagne, FranceLike a lot of non vintage champagnes, this is based on a single vintage. In this case, the majority of the wine is comprised of base wine from 2013 (80 percent), with a dollop of wine from 2012 and reserve wine from 2004. From the more pinot noir-oriented village of Bouzy, this is 70 percent pinot noir and 30 percent chardonnay that’s been aged on lees for four years. The less is more winemaking gives you a transparent expression of Bouzy, with only a 3.5 g/L dosage. This has a complex, precise nose of red berry fruit, lemon yoghurt, hazelnut, brioche, and oyster shell. The mousse is quite fine and creamy, and the palate has the tension and mouth-filling minerality that you can only reliably find in Champagne.
